A BUDLEIGH Salterton husband and wife have taken over the running of historic Otterton Mill. Simon and Caroline Spiller two weeks ago took control of the mill from Claire Stein and Bob Butler, who stepped down after five years at the helm.Caroline, who has been the mill administrator for the last year, will be leading the business, which includes an art gallery, the renowned bakery, restaurant, food shop, music and working water mill.Simon plans to promote the mill's growth while continuing as management consultant.He said they were both looking forward to the challenge of running the mill, ensuring it a successful future while retaining its philosophy."Caroline's been seduced by the whole ethos of the place."We want to make sure we don't throw the baby out with the bath water and continue the legacy left by Bob and Claire," said Simon."They have done a great job of growing it over the last few years."The only daunting thing is that we can honour their legacy and continue that."Both of us have run pretty big operations before. "We have both come from big businesses and have the management experience, but here we want to do it in a way that will retain the personal touch."The former owners will still be involved with the mill because Bob will continue to book the music.New owners Simon and Caroline plan to extend the art and crafts events and hold extra music performances - a Shakespeare night is planned for April 23.And the Devon couple hope to extend the wholesale of mill flour and bread throughout the region.
